Day 9 *Vegetable Patties with Home-made Guacamole*
Dinner:
Can of canellini beans
400g of red lentils soaked in water to make them soft
1 Zucchini grated - wring out the liquid
2 cloves of garlic
½ red onion
2 free range eggs
1 Cup of rice flour
Mix all ingredients together in food processor. Make mixture into patties. I cooked these in the oven at 200 Degrees Celsius for about 30 Minutes.
Guacamole:
½ red onion
1 clove of garlic
1 Tomato
1 juice of a small lime
2 Avocados
Salt and pepper to taste
Dessert:
2 Tablespoons of vanilla yoghurt with 1
Tablespoon of mixed berries
These Vegetable Patties were our favourite meal this week. They were filling and delicious!

So healthy! I'd love to get my son eating these patties as there's so much goodness packed in. He's really fussy. Great recipe :)
